Meryl van der Merwe grew up in Cape Town, South Africa, and has over 25 years in the Food and Beverage and Events industries. Meryl left Cape Town at age 18 to pursue her passions of food and travel in Europe, Asia, and the Caribbean, although her international travels started even earlier at age 8 when she represented South Africa in the BMX World Championships in Santiago, Chile.

Entering the world of Super Yachts and basing in the South of France, Meryl embarked on a 13-year career as a Private Chef, learning numerous global ingredients and cuisines while traveling and working around the world.

Initially trained by Michelin Star-level chefs, Meryl later completed formal classical French culinary training. Between Meryl’s yachting career and her subsequent catering and private chef venture (Du Monde Gourmet Catering and Private Chef Services), her clients have included royals, presidents and other heads of state, and household name celebrities, as well as corporate entities such as Under Armour and Google and their respective founders and families. Through these years, Meryl staged world class events in locales ranging from Park City to Los Angeles to New York to Baltimore to Cannes, France.

In order to best serve our members, the following holiday dining policies are in place for the holiday period (December 19th – January 6th). We ask that you review them prior to making a reservation for one of these high demand evenings:

• The Hearth & the Peak will begin taking winter season dining reservations Wednesday, November 1st.
  The Hearth & the Peak will be serving an A La Carte menu with our Chefs’ additional Holiday Specials December 20th – January 6th.
  Due to the high demand during the holiday period, we limit the dining experience to 2 hours per reservation.
  Reservations can only be honored up to 20 minutes past the reservation time.
  A $25 per person cancellation fee (not to exceed $300 per reservation) is in place for reservations cancelled less than 48 hours prior to the reservation time.
  We will confirm your reservation via phone 24 hours prior to the reservation.
  We may not be able to accommodate a last-minute increase in party size (due to a lack of additional seating), so please plan accordingly.
  In order to provide the greatest opportunity for our members to secure a holiday dining reservation, we ask that you do not hold dining reservations at two restaurants for the same evening. Please carefully consider your dining preference and reserve accordingly.
