Introducing Chef Phelix Gardner
Promontory Club is proud to introduce Chef de Cuisine Phelix Gardner, a classically trained culinary leader whose thirty-year career has taken him from the Five-Star kitchens of Orlando to the forefront of Utah’s farm-to-table movement.
A Career Defined by Excellence
Born in Spain and shaped by a Mediterranean sensibility, Phelix built his reputation on precision and craft at iconic properties including the Peabody Orlando and Walt Disney World, before moving west to become a defining voice in Salt Lake City’s dining scene. As Executive Chef and Partner of the Pago Restaurant Group, home to Pago, Finca, East Liberty Tap House, and Emigration Cafe, he helped establish the regional standard for seasonal, ingredient-driven cuisine. His leadership later extended to Stanza Italian Bistro, Current Fish & Oyster, and the Forbes Five-Star Grand America Hotel.
A Menu Rooted in Technique and Seasonality
At Sage, that philosophy continues. The menu balances beloved classics with seasonal, ingredient-driven cooking. Nonna’s Lasagna, layered with beef, pork, tomato ragu, bechamel, and Parmigiano Reggiano, is the kind of dish that earns a permanent place at the table. Alongside it, Chef Phelix brings a signature touch to the Grilled Red Prawns, Pork Chop, and Butcher’s Cut Steak, each finished in the wood-fired pizza oven for a depth of flavor that is distinctly Sage.
