Memorial Day Weekend at Our High-Altitude Beach
I feel like the culinary queen following last week’s fabulous cooking class with Chef Joey at The Hearth! It gave me inspiration and new ideas for all the entertaining I hope to do at our Nicklaus Villa this summer. We expect to have a lot of friends and family who will want to visit Park City as you can’t beat the mountain recreation and weather. A terrifically patient teacher, Chef Joey taught us how to make basil vinaigrette for tasty summer salads, flatbread and pasta dough from scratch, yam and Brussels sprouts hash, and half-baked chocolate cake. The flatbread was probably my favorite as it’s such a staple offering in Southern California restaurants. Now, I can impress friends by serving my own!
As a girl of summer, Memorial Day is one of my favorite holiday weekends. It was an extra special one at Promontory with Friday’s opening of the Beach House. Who says the beach has to be at sea level? It was the sunniest, warmest day we’ve experienced for a while, so the timing was absolute perfection. Our kids, Katie and Jack, wore themselves out paddleboarding, and they were having such a blast that we had to beg them to join us for lunch at The Beach House Cafe. We all loved the new menu! Following lunch, Steven and I returned to our lounge chairs and raised our red flags for chaise-side service of a couple of refreshing summer cocktails. How lucky are we for not having to sacrifice the beach vibe when moving from Southern California? We look forward to more beach days at 7,000 feet this summer and will be sure to reserve a cabana above the water for when guests come out to visit.
Okay, so here’s my featured home of the Week: the Klee Nicklaus Villa #28. I guess you could say I am partial to the Nicklaus Villas since we live in one!
