A Most Eggcellent Easter

Our first Easter celebration in Promontory was a magical affair! We earned our magnificent Easter brunch at The Peak by kicking off the gorgeous day with a family hike on the Princess Di trail, part of this second home community’s network of 30 miles of trails. It was an unusually warm weekend with temperatures hitting 60 degrees, so we opted to trade our skis from Saturday for hiking shoes on Sunday. As the Park City locals say, this time of year, it is typical to enjoy summer and winter recreation in a single day or weekend.

The Princess Di trail offers sweeping views of the Uinta and Wasatch Mountain Ranges and gentle switchbacks. And it’s fairly common to get a glimpse of wildlife willing to share the trail. In addition to some grazing deer, the kids spotted two large, white rabbits – how perfectly appropriate for Easter!

When it was time to go from real bunnies to the Easter bunny, we headed back to our Nicklaus Villa to change for brunch. We were greeted by the Easter bunny at The Peak, and Katie took off for the egg hunt. There were two egg hunt areas on the grassy area behind the clubhouse – one designed for those three and under and the other for ages 4 to 12. Between the egg hunt and the “kids candy table,” there was a phenomenal abundance of candy for the young and young at heart to enjoy. Jack and Katie snuck a few pieces before we sat down for a most decadent brunch with fellow Promontory members. It was a packed house with members entertaining friends and family in celebration of the holiday. As new residents, we enjoyed seeing familiar faces and new friends, while meeting others for the first time.

The lavish brunch buffet featured a selection of fresh salads and fruit, which we began our meal with. Our second course consisted of delectable sushi – high-quality fish that rivaled what we often enjoyed in Southern California. My next lap to the buffet was for the omelet station and some applewood smoked bacon while Steve dashed to the incredible carving station offerings. He tried both the Roasted Braised Pork Belly and the Steamed New Zealand King Salmon. I stole some of his salmon to enjoy with my veggie omelet, and it was absolutely divine. Our kids, Katie and Jack, dared Steve to make one more lap to the buffet for the Corned Beef Hashed Eggs Benedict, but he opted to save a bit of room for dessert instead. Katie loved the Kid’s Corner options that featured fried chicken lollipops, mac and cheese, brioche vanilla French toast, cheeseburger bites, and more. Jack’s favorite buffet item was the herbed crusted prime rib served with Cuban-style sweet potato, green beans, port reduction, and horseradish cream. Steve’s final trip to the buffet was to fetch a plate of pastries, chocolate bread pudding, Easter-themed cupcakes, and cookies for the four of us to share family-style. And, now…I fast! Thankfully, I could hit a spin class at Promontory the next morning!

After brunch, we had a family photo taken on the deck with a couple of darling bunnies as props and Deer Valley as the gorgeous backdrop. We chatted with other members who remarked that they loved the venue change to The Peak for this year’s Easter celebration. In the past, brunch was served at the Hearth Grille, and the egg hunt took place at the Shed.

Yesterday, Park City Mountain and Deer Valley Resort bid farewell to the ski season. While it’s sad to see our first Park City winter draw to a close, we are excited for summer to arrive! There is always something to look forward to in Park City, Utah. In the meantime, we are heading back to Laguna Beach for the kids’ spring break. We can’t wait to tell our family and friends how amazing Promontory is in hopes of enticing them to visit during the summer.
